Fresh cumin seeds are dried fruit of the Cuminum cyminum plant, a member of the parsley family. These have a toasty, earthy flavour and scent. The small, oblong seeds of a light yellowish-brown tint. Freshly ground seeds have the strongest flavour and scent. Before grinding, they should be lightly toasted in a dry skillet to unleash their flavour and perfume.
